
Just like everyone else, I was avidly watching the third season of The White Lotus, mostly for our Lord and savior, Parker Posey. I had some friends over, so I was looking for something to drink that would be festive for the occasion. This is what I came up with. I wanted it to resemble a Piña Colada (before knowing the plot point!) but with some Southeast Asian flair.
- 2 ounces lemongrass-infused white rum (I used Copalli)
- 1.5 ounces lime juice
- 2 dashes Bittercube Jamaican Bitters
- 2 ounces pineapple juice
- Splash of coconut cream
To make the rum, all I did was get some squeeze lemongrass from the grocery store and put it in a jar for a few days with some rum. I strained it before using it. I also garnished with a bit of mango I had in the fridge.
